Some yummy muffins

Okay, one of these photos is of my beloved muffins, the other is of my beloved Ruby. So when I’m not chasing this child out of my closet, or alternatively chasing her sister, I like to bake. These muffins are a cinch and a very good excuse to use up that overripe banana.

I will give credit to the Everyday Food Magazine, but the substitutions are all mine.
Healthy Morning Muffins

(Makes 12, active time 10 minutes, total time 35 minutes)

nonstick cooking spray
1 1/4 cups all-purpose flour
1/2 cup dark brown sugar
1/2 t baking soda
1/2 t baking powder
1/2 t salt
1/2 t nutmeg
1 cup old-fashioned rolled oats
1/2 cup raisins
3 Tablespoons of extra virgin olive oil
1 large egg
1/3 cup skim milk
1 medium banana, mashed
4 medium carrots, shredded

1. Preheat oven to 400 F. Coat a 12-cup muffin pan with cookign spray.  In a large bowl, whisk together flour, brown sugar, baking soda, baking powder, nutmeg, and salt until there are no lumps.  Stir in oats and raisins. Add oil, egg, milk, banana and carrots and stir until blended.
2. Fill each muffin cup with 1/4 cup batter. Bake until a toothpick inserted in the center of a muffin comes out clean, 23 to 25 minutes. Serve muffins warm or at room temperature. (To store, keep in an airtight container, up to 3 days.)

Some of my thoughts (please, control yourself with your enthusiasm):

I usually do 2-3 carrots, because 4 carrots (at least the kind I seem to buy) is a LOT of carrot
I use any kind of milk that I have (well, never done chocolate, but 1%, 2% or whatever)
I started doing 1/4 t of nutmeg and 1/4 t of cinnamon
I often use “Whole Wheat Pastry Flour” instead of the all-purpose flour
I also often add 1/8-1/4 c of flax seeds
I have forgotten to add the egg before, and miraculously, they didn’t fall apart on me. However, on that occasion, my carrots started to turn green. Wonder what that was about?
I have used craisins when I didn’t have a full 1/2 cup of raisins, but one time I tried dried cherries. I wasn’t a fan of the cherries, way too sweet.

Now go forth and bake!

We are fitness freaks

Well, not really. I wish that were true. But I would like to make it come true… soon. We joined the Fort Collins Club. Number one reason: they sent us a coupon for a free month in the mail. And in doing a bit of research, it’s probably more expensive than I’d like (you have to pay for child care each time you use it, which will rack up rather quickly), but I think we were blown away by the facilities. Mind you, we’re simple people, and were happy members of the YMCA down in Denver. I can’t imagine what some of these super-gyms look like, because I was pretty thrilled by the fact that the showers are individual and you don’t have to bring your own towel. I know, I know, my naivete is charming.
First day of working out went rather well, until the “Kids Club” director found me to tell me that Ruby was not doing well. So, I wrapped it up (sans shower, dammit), and got my bumkins a bit earlier than intended. I need to be patient with the adjustment for the little one, though Scout could have easily stayed all day. All in all, I’m looking forward to utilizing this membership. They even allow you to leave the site to use the bike/running path behind the club. I might just bring a book and let these people watch my kids just for kicks.

Autumn is so mild this year, and I love it. While it lasts, I will be out and about as much as possible.
Yesterday we took a walk around the reservoir at the Fossil Creek park. We found more crayfish claws, so Scout was thrilled. She also happily “stirred” the water.
Today we made our way to Miramont park around 10:30 am. It was hoppin’ since public school is off today. I don’t think I’ve ever seen quite so many people at that park before.
After our playdate ended, we headed to the Bible Superstore to purchase a baptismal gift. I must say, I didn’t scour all the shelves or anything, but it is large… a very, very large Christian bookstore. I was able to purchase a themed gift-bag, too. It’s my first time using Christian wrapping.

And I haven’t done this in ages. How do people keep up with blogs? I think this will be my mission. You see, I started this a while back… actually, BEFORE we even moved to Fort Collins. And here I am, several months later (and wiser about Fort Collins, mind you), and I have been a pathetic blogger.
I will do this in hopes to have some “me” time, and to dedicate a moment to getting smarter about my own community. Let’s see how it goes.
